Butter

The most simple TIP for BUTTER that really helps my cookies is to have it at room TEMPERATURE.  So it takes some planning….set the butter out for a few hours, but not so long that it is too mushy.  If you don’t have a lot of time, cutting up the butter into pieces also helps this process.
